Chicken and Black Mushroom Stew Recipe



The best combination of chicken and mushroom, makes this perfect soup recipe, it is nutritious as well as tasty, and all the ingredients are easy to get in your refrigerator.

Prep time: 20 minutes
Cook time: 40 minutes

Ingredients:


  • 1 chicken leg, chop into chunks
  • 20 dried black mushrooms
  • 3 asparagus, rinse well and cut into sections
  • 2 tbsps. chopped scallion
  • 3 slices ginger
  • 1 tsp. salt, or to taste

Method:

  1. Soak the dried black mushrooms in warm water, about 20 minutes, then trim off the stems, cut into half 
  2. Add enough water (about 2-3 cups) in a wok, add chicken, ginger slices, cook over high heat until boiling.
  3. When boiling, add mushrooms, add asparagus when boils again.
  4. Bring them to a boil again, then reduce to low and simmer for another 30 minutes, or until the chicken has done.
  5. Season with salt when nears done, remove to a bowl, sprinkling with chopped scallion before serving.
