4-Grain, Coconut, Chocolate-Chip Cookies Recipe

Since it's Holiday Time doesn't that also mean yummy goodies, treats, chocolate, no diet, appetizers, baking, no dieting, cookies, etc? Well let me throw this recipe in with your mix....4-Grain, Coconut, Chocolate-chip Cookies!!! They are sweet and moist and I personally like to think they are low fat because I used freshly ground flour AND the 4 -Grain Mix!!! 
Recipe:
1 cup Brown Sugar
3/4 cup Sugar
1/2 cup Honeyville Powdered Shortening + 1/3 cup water

1/4 cup Honeyville Powdered Whole Egg+ 1/2 cup water
2 tsp. Vanilla
2 Tbsp. Milk (you could use powdered milk here, I just wasn't thinking correctly)
2 cups of ground Honeyville Soft White Wheat (or 2 cups flour)
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
2 cups Honeyville 4-Grain Mix
1 cup Honeyville Coconut
Chocolate Chips


Preheat oven to 350 degrees. Beat shortening and sugar. Add eggs, vanilla, milk and mix well. Combine flour, baking powder, baking soda, and salt. Add 4 grain, coconut and mix. Add desired amount of chocolate-chips.
(yes, your dough will seem a little thin and runny, it's okay!)
***Refrigerate for 2-3 hours***
Bake for 10 mins on a greased cookie sheet

You wonder why it needs to be refrigerated for a couple of hours? Because of the ground Soft White Wheat, the 4-Grain Mix, and the Coconut it needed time to soak up all the extra moisture. Once the moisture is soaked up the cookies will look like "real" cookie dough, taste delicious, and come out nice and moist!
