Gluten Free Coconut Orange Cake




Don't you just love the smell of a fresh sliced oranges? That sweet, citrus aroma fills the senses and and is almost as good as eating the orange itself. One of the benefits of living in Southern California is having access to such amazing oranges nearly all year round.

Just a few weeks ago my family and I visited a local orange grove where we were able to pick our own oranges. Let me tell you, it was amazing! The sweet smell of citrus blossoms and oranges growing on the trees made it an experience we'll never forget. And the taste of each orange? Simply amazing! That's why today I wanted to get everyone in that spring-time mood with a delicious treat using fresh oranges. Combining the delicious, gluten free taste of our Coconut Flour and Organic Coconut Oil, we've come up with an orange-flavored dish you just won't be able to put down. Get ready for this flavorful, Gluten Free Coconut Orange Cake.

Ingredients:
3/4 cup Ova Easy Egg Crystals + 1 cup Water (or 6 fresh eggs)
1/4 cup Coconut Oil
1/4 cup Milk
6 Tbsp Agave Nectar
Zest from 1 medium Orange
Juice from 1 medium Orange
1/2 cup  Organic Coconut Flour
1/2 tsp Baking Powder
1/2 tsp Salt

Orange Frosting:
4 Tbsp Coconut Oil
Juice from 1 medium Orange
Zest from 1 medium Orange
1/2 tsp Vanilla
1 1/2 cups Powdered Sugar

Directions:
Preheat oven to 350 degrees.


In a large mixing bowl, combine egg crystals, water, agave nectar, and milk. Mix together until completely blended.


Add coconut flour, baking powder, salt, orange zest, and coconut oil and mix together until a soft batter begins to form.


Pour batter in a 9x9 baking pan and place in the oven at 350 degrees for 35-40 minutes, or until a toothpick comes out cleanly.


Remove and allow cake to cool in the pan for 5-10 minutes, then remove from pan and allow to cool on a wire rack.


Using a fork, poke holes all around the cake. Make sure not to poke all the way through the cake.


Juice a medium orange in a separate pouring cup.


Gently pour orange juice over the top of the cake, allowing it to soak through the holes you poked.


While cake soaks up the juice, begin your frosting by combining all ingredients in a medium mixing bowl and mixing with an electric mixer until a soft frosting forms.


Using a spatula, spread frosting over the top of your cake evenly.


Once cake is frosted, slice and serve.


This cake is packed full of so much flavor, your taste buds won't know what hit them. The delicious aroma and flavor of the oranges definitely shines through, but the subtle hint of coconut flavor is just the right partner for this treat. By far the star of this show is the frosting! Super creamy, soft, and delicious, you'll be doing everything you can not to lick the mixer blades when you're making it. But if you do, don't worry, we won't judge!
