Baked Rice Pudding Recipe




Who else is a fan of rice pudding? I know, I know, rice pudding is really more of a Holiday time meal, right? Wrong! Rice Pudding is a delicious dessert or breakfast treat that can and should be enjoyed at anytime. But, as with any other delicious meal, it's all about the ingredients you put into it.













Take our all new Parboiled Rice for example. Soaked, steamed, and dried, parboiled rice looks, feels, and taste completely different than your typical white rice. It can be used in any dish you desire. Stir Fry, teriyaki, or just simply cooked up with some vegetables, this is by far one of the most versatile and most delicious rices out there. Because of this, I knew I had to use it to make some super smooth, super moist rice pudding. But this isn't your normal rice pudding. The biggest difference you ask? The whole thing is baked up to perfection, giving our rice pudding a taste you simply can't find anywhere else. Grab your biggest spoon, it's time to create some delicious Baked Rice Pudding!

Ingredients:
1/2 cup Parboiled Rice
4 cups Milk, divided
1/4 cup (half stick) Butter
3 Eggs
1/3 cup Sugar
1 tsp Vanilla
1/2 tsp Salt
Cinnamon (for seasoning)

Directions:
Preheat oven to 325 degrees.












On your stove top, add 2 cups milk to 1/2 cup rice and bring to a boil.












Reduce heat to low, cover, and allow to cook for 15-20 minutes, or until rice is soft and tender.












Remove from heat, drop in butter and stir until completely melted and combined with rice.












In a separate bowl add eggs, sugar, vanilla, salt, and 2 cups milk, and beat together until completely combined.












Add rice and gently stir together.












Pour pudding into an 8x8 baking pan and place in the oven at 325 degrees for 40-50 minutes. About half-way through cooking, add cinnamon and stir together until completely combined.












Remove from oven when a knife inserted comes out clean. Slice up and serve.
