Chicken Mango Wonton Bowls Recipe




Tasty and healthy. Those are two words your rarely hear in the same sentence. In our day of deep fried, Grab-N-Go eating, tasty and healthy seem to be complete polar opposites. Separated for all time by the notion that food that is healthy simply can't taste good.

Today that separation ends! It's time to have enjoyable food without all the regret. It's time to see our waist lines drop while our taste buds salivate! It's time to enjoy food again, all while feeling good about, and also with, ourselves. Today we've created a delicious, low calorie dish you can enjoy as a light meal or amazing appetizer. Simple to make and using our amazing Freeze Dried Chicken, Freeze Dried Sweet Corn, and Freeze Dried Mangos, here is a dish that breaks down the barrier and reunites the words "tasty" and "healthy" once more. It's time for Chicken Mango Wonton Bowls!

Ingredients (Cups and Filling):
24 Wonton Wrappers
1 cup  Freeze Dried Chicken
1 cup  Freeze Dried Mangos
1 cup  Freeze Dried Sweet Corn
1 Avocado, peeled and diced

Creamy Sauce:
2 Tbsp Mayonnaise
2 Tbsp Greek Yogurt
1 1/2 Tbsp Buttermilk
1 tsp Dill
1/2 tsp Minced Garlic
1/2 tsp Black Pepper
1/2 tsp Salt
1/2 tsp Paprika

Yields: 12 cups

Directions:
Preheat oven to 350 degrees.












Spray a standard 12-cup muffin tray with cooking spray.












Line each cup with 2 wonton wrappers. Lightly spray each wrapper with cooking spray.












Bake at 350 degrees for 8-10 minutes. Remove, and allow to cool on a wire rack.












You want each cup to just be lightly golden on top.












Once cups are baked, begin your sauce. In a large mixing bowl, combine mayonnaise, yogurt, buttermilk, dill, garlic, black pepper, salt, and paprika, and whisk together until fully combined.












Next, re-hydrate your freeze dried items.












To re-hydrate, simply place in a bowl and add just enough water for the food to soak in.












Let them soak in the water until completely softened, then drain any excess water.












Take a cup and add a spoonful of corn.












Next, add your chicken. Because our Freeze Dried Chicken is cooked before it is freeze dried, you don't have to worry about cooking the chicken beforehand. It's good to go, right out of the can!












Now add your mango and diced avocado.












Finally, drizzle on your sauce.












Repeat the process for each cup, then serve.
