Gluten-Free Banana Bread Bites





Banana and chocolate chips. Two ingredients we rarely combine, yet all agree make the most delicious combination you can imagine, especially when baked up in warm Banana Bread.

Now, imagine, if you will, never being able to enjoy this sweet and delicious combination because, well, you can't have banana bread. Terrible, isn't it! For many that suffer with celiac and other gluten allergies, this awful dream has been a life-long reality.

Not any more! Thanks to our amazing and versatile Organic Coconut Flour, our awesome Organic Peanut Butter Powder, and with a little help from our Freeze Dried Bananas, we've created a bite-sized, oh so delicious snack that is gluten-free and absolutely amazing. And did we mention it also has chocolate chips? Yup, you know you can't pass this up! Get ready, it's time for Gluten-Free Banana Bread Bites!

Ingredients:
2 cups Honeyville Freeze Dried Bananas
1/2 cup Honeyville Organic Coconut Flour
1/2 cup Honeyville Organic Peanut Butter Powder
1/4 cup Water
1/2 cup Pure Maple Syrup
1/4 cup Dark Chocolate Chips

Directions:
Preheat oven to 350 degrees.

Re-hydrate bananas by soaking in water until soft, then draining any excess liquid. Once soft, mash with a fork.

In a large mixing bowl, combine mashed bananas, coconut flour, peanut butter powder, water, and maple syrup, and stir until a thick batter forms.

Gently fold in chocolate chips.

In your USA Pan Muffin Pan, lined with muffin liners, fill up each cup.

Bake at 350 degrees for 20-25 minutes. Remove, allow to cool for 10 minutes, then enjoy!
