When I first got a microwave oven (a very long time ago), I took some complimentary microwave cooking classes that came with the purchase. This cauliflower dish was one of the featured recipes at those classes and has been a favorite through the years.
- 1 medium head cauliflower
- 2 Tablespoons water
- 1/4 cup mayonnaise or salad dressing
- 1/4 cup sour cream
- 1/2 teaspoon salt (or garlic salt)
- 1 teaspoon prepared mustard
- 1/2 cup grated cheddar cheese
- Cut off leaves of cauliflower but leave the head whole.
- Cut a cone-shaped section from center core for more even cooking.
- Place cauliflower stem-side down in large casserole. Add water.
- Cover and microwave on high for 8-10 minutes. (It should be just tender).
- Allow to stand for about 5 minutes.
- Combine mayo, sour cream, salt and mustard.
- Place head of cauliflower on large serving plate and spread with sauce.
- Sprinkle with cheese.
- Microwave 1 minute or until sauce is hot and cheese is melted.
